Spring Herb Salad

Some of you may have seen the picture of the herb salad I shared on Instagram. I received a few comments asking for the recipe, so I figured I would share it here!

My love for herb salads comes from my mom and my grandparents. We always had fresh herbs in the house and in our food when I was growing up, and they made everything taste fresher. I love this salad because it tastes so light and refreshing. I hope you enjoy it!

Ingredients:

For the Salad:

1/2 cup of chopped parsley

1/2 cup of chopped dill

1/2 cup of chopped mint

1/2 cup of chopped oregano

1 cup of chopped arugula

1/2 cup of chopped cucumber

1/2 cup of chopped tomato

1/4 cup of chopped red onion

1/2 cup of crumbled feta

For the Dressing:

salt and pepper to taste

olive oil and red wine vinegar to taste

For Serving:

squeeze of fresh lemon (optional)

Greek yogurt (optional)

bread or crackers (optional)

Directions:

  1. Wash and chop all of your herbs and vegetables

  2. Combine them in a large bowl, and mix.

  3. Add olive oil, red wine vinegar, salt and pepper.

  4. Mix again, and enjoy!

I love to eat this over Greek yogurt, or by spooning or scooping it onto to bread or crackers. This is when I add a fresh squeeze of lemon!
